Nutty Coconut Baked Apples with Cider Sauce
Prep Time: 25 minutes, Serves 6
If you have a hankering for apple pie, but can’t seem to nail down a grain-free pie crust (I feel your pain), this is a great alternative. You have the same soft, juicy apples, but with a sweet-tart cider sauce and a chewy nut-coconut mixture for contrast. Add a dollop of Whipped Coconut Cream (page 000) and you’ve got the perfect bowl of autumn.
Directions
Arrange the apples in a 6-quart (5.7 liter) slow cooker—just to make sure you’ve got room for all of them.
Hollow out each apple by cutting an inch or so around the stem, toward the center. Remove the top and scoop out the core and seeds with a spoon. You don’t need to scrape out additional apple flesh. Squirt the insides and cut edges with the lemon juice to prevent browning.
In a medium bowl, combine the walnuts, coconut, and dates. Drizzle in the honey and add the cinnamon, salt, and nutmeg. Mix well.
Fill each apple with the nut mixture, pressing it in tightly. You may have a little bit of filling leftover.
Add the cider, ghee, and coconut sugar to the slow cooker. Arrange the apples in the cider, standing upright.
Cover and cook on low for 3 hours.
Remove apples carefully with tongs and transfer them to a serving platter. Pour the cider syrup into a small bowl.
Serve each apple with a generous drizzle of cider syrup and a dollop of Whipped Coconut Cream.
- 6 medium, tart baking apples (Pink Lady, Honeycrisp, or Jonagold work well)
- ½ lemon
- ¾ (90 g) cup raw, unsalted walnuts, chopped
- ¾ cup (60 g) unsweetened coconut flakes
- 6 Medjool dates, pitted and chopped
- 3 tablespoons (60 g) raw honey
- ¾ teaspoon cinnamon
- Pinch of sea salt
- Pinch of nutmeg
- 2 cups (475 ml) unsweetened apple cider
- tablespoons (43 g) Homemade Ghee or grass-fed butter
- ¼ cup (38 g) coconut sugar
- Whipped Coconut Cream, for serving (optional)

Ich habe schon vieles gekocht und wirklich nicht einmal schlecht gegessen. Auch nach 4 Jahren noch ein tolles Kochbuch
There's not many true Paleo cook books out there, and now there is one less.
Since when were nightshades Paleo? Since when were grains Paleo??
Nearly every recipe in this book is riddled with nightshades, and some with grains. So much so the recipes won't work without them, or there is no workable substitute.
This author clearly doesn't live a Paleo life, and doesn't respect its principles or the reasons why people follow a Paleo diet.
Nightshades, legumes, grains, dairy can be damaging to the gut (even in healthy people, ie what happens when you eat beans?? digestive difficulty and damage, that's what), and flare existing autoimmune conditions, such as thyroid issues, diabetes type 1, lupus,
rheumatoid arthritis, coeliac disease, Crohn's disease, ulcerative colitis, and that's just for starters.
Many people have no choice but to follow a Paleo diet, which is difficult and massively life changing, and often without much support from the people around them.
It makes me angry and sad to see authors supposedly give hope to those who want to buy this book that at last no one will mess with our necessary way of eating, but authors still think they can throw a "Paleo" book together to add to their repertoire and think "that will do for those people".
If you are a true and necessary Paleo follower then please don't buy this book, you will find you either can't use any recipe or will have to change and adapt, when you shouldn't have to!
Authors, show some respect for us, we are not a fad.
Further, the author has cut down the cooking time to max 4-5 hours, so that puts a stop to prepping in the morning and going out for the day. And they also put a downer on modern slow cookers, saying the keep warm function is too hot in most cookers these days and shouldn't be used for more than 30 mins. I mean honestly, what's the point?! I think this author is a bit of a spoil sport, and maybe not so much of an expert as they make out.
On another note, many of these recipes require browning or searing in a pan first. What is the point of a one pot method then?? I want a one stage one pot one stop solution. I don't want to fry or roast or bake something first, I might as well just use that method and eat it. Slow cookers are supposed to be easy unsupervised and take the fuss away.
BTW some slow cookers, without wishing to promote any product in particular, can saute in the slow cooker itself first. While it's still not ideal in my eyes, at least it uses just one piece of equipment. Go look for it.
Most of the recipes pair well with instant rice for the kids or family members that are not Paleo. But most importantly all the recipes I have tried have been delicious! So delicious I am disappointed when our slow cooker is dirty and I have to make something out of a different cookbook.
