Spring salad time!

Spring has arrived, so has my favourite spring salad – lettuce, orange and pecan salad.

Ingredients:

  1. handful spinach
  2. 2 handful pecans, toasted and roughly chopped
  3. 2 oranges and 1 apple, peeled and sliced into thin circles
  4. 1/4 cup orange juice
  5. handful goat cheese
  6. tablespoon white wine vinegar
  7. 1/4cup extra-virgin olive oil
  8. salt & pepper

 Directions:

  1. Place the spinach, chopped oranges, apple and pecans in a large bowl. Mix all together.
  2. Add goat cheese and stir.
  3. In a small bowl, whisk together the orange juice, oil, salt, and pepper.
  4. Add the mixture to your salad and toss.
