Creamy & cheesy potato soup

I love soups. They warm me up on freezing days and fill me up. Although one of my favourite soups is pumpkin soup with coconut, I also like creamy & cheesy potato soup that is perfect for winter and autumn days.

  • 55g butter (vegan or ghee butter)
  • 50g cheese (vegan cheese for vegans)
  • 250g peeled potatoes
  • 1 onion
  • 1/2 tsp salt & pepper
  • 1/2 glass water (more if needed)
  • 100ml coconut milk
  • herbs of your choice


  1. Melt butter in a saucepan.
  2. Add chopped potatoes and onions. Toss them in the butter.
  3. When well coated, add some salt, pepper & herbs of your choice.
  4. Cook for about 10 minutes.
  5. Add water and continue to cook for about 10-15 minutes.
  6. Add the milk and blend the soup in a blender or food processor.
  7. Taste and adjust seasoning.
  8. Serve sprinkled with a few freshly chopped herbs and grated cheese.
