Giant peanut butter protein cookies are definitely one of my best snacks to grab when I’m on run to uni or school. Reason? They are very yummy and feeling, yet easy to make and not that time-consuming. I got this simple recipe from one of my friends, moderated it a bit and here it is:

  • 1 cups of peanut butter (250g)
  • 2 large eggs
  • 2 egg whites
  • 4 tbs applesauce
  • 2 scoops vanilla protein powder
  • 1 cup oats (100g)
  • 1/4 tsp salt
  • 2 tsps baking soda
  • 4 tbs mini chocolate chips

  1. Preheat oven to 350 degrees
  2. Line sheet pan with foil.
  3. Spray with non-stick spray.
  4. Microwave peanut butter in for 30 seconds.
  5. Mix together the first four ingredients until smooth in a medium bowl and mix together the rest of the dry ingredients in a separate bowl.
  6. Combine the wet and dry ingredients together.
  7. Add chocolate chips and sprinkle some on top.
  8. Roll cookie dough into balls.
  9. Bake 8-10 minutes.
  10. Let cookies cool, and enjoy!
